Instructions:

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Place the block of feta cheese in the center of the roasting pan or baking dish.
  3. Surround the feta with the cherry tomatoes, placing them cut-side up.
  4. Drizzle the olive oil over the top of the feta and cherry tomatoes.
  5. Sprinkle the oregano, basil, salt, and pepper over the top of everything.
  6. Cover the pan or dish with aluminum foil and place it in the preheated oven.
  7. Bake for 20-25 minutes, or until the feta is soft and the cherry tomatoes are starting to burst.
  8. Remove the foil and continue baking for an additional 5-10 minutes, or until the feta is golden brown on top.
  9. Garnish with chopped fresh parsley if desired, and serve immediately.

Tips and Tricks:

  • For an extra burst of flavor, try adding some minced garlic or sliced red onions to the pan before baking.
  • If you prefer your cherry tomatoes on the softer side, increase the baking time by 5 minutes.
  • Don't be afraid to get creative with your seasonings! This recipe is a great base for adding in your favorite herbs and spices such as Spiceology’s Greek Freak. Try adding some crushed red pepper flakes for a little bit of heat, or some chopped fresh rosemary for a woodsy, aromatic twist.
  • This recipe is perfect for serving as a main dish or as a side dish. It pairs well with a variety of proteins, such as grilled chicken or seafood, and can also be a cherry tomato and feta pasta as a heartier meal.
