One Grill Bowl Chipotle Honey Chicken and Rice

Hello there, everyone! This week, I've got a simple chicken and rice dinner recipe that's perfect for your busy weeknights. But before we dive into the recipe, let me tell you about my Kamado Joe adventure – complete with a few mishaps and a lot of deliciousness! I was in a hurry, and, well, I made a #rookiemistake by forgetting to open the vents on my Kamado Joe grill. Without enough oxygen, the charcoal just wouldn't light up! It turned into a little grilling adventure that didn't go as planned. But no worries, we still ended up with an amazing dish! So, put on your aprons, and let's start cooking!

Instructions:

  1. Get your Kamado Joe grill or oven fired up, aiming for a toasty 350°F – 400°F.
  2. In a bowl, mix olive oil, parmesan cheese, chipotle in adobo, smoked paprika, onion powder, chopped garlic, and lemon zest. Throw in that chicken, season it with a sprinkle of salt and pepper, and give it a good mix.
  3. Pour your preferred rice and zucchini into the Romertopf Grill Bowl. Pour over 2 cups of water. and drizzle with 2 tablespoons of olive oil (or whatever cooking fat floats your boat).
  4. Now, let's get artsy. Arrange that marinated chicken over the rice and zucchini.
  5. Once the Kamado Joe is in the 350°F – 400°F range, place the Romertopf Grill Bowl with the rice, zucchini and chicken for 30 – 40 minutes, until the rice is fluffy and chicken is cooked through.
  6. While you're waiting, let’s get our hot honey sauce done. In a saucepot, heat up some hot honey, a dash of onion powder, and a pinch of salt. Fun fact: I used my top-secret Jessy’s Honey for that extra kick, stay tuned; I might reveal the secret soon! I've been perfecting my homemade hot honey since 2021, and trust me, it's a flavor game-changer.
  7. Once the chicken is cooked (when the meater reads 165°F), brush half of that hot honey sauce all over the chicken.
  8. It's time to plate up your dish! Serve the chicken, rice, and zucchini topped with fresh basil and an extra drizzle of the honey sauce. Enjoy!

With just the Romertopf Grill Bowl and Kamado Joe grill or oven, you can create this flavorful Chipotle Honey Chicken and Rice dish. The smoky grill flavor, the kick of chipotle, and the sweetness of the honey combine for a taste sensation that’ll make this dish one of your favorites!

So, fire up your Kamado Joe, grab your ingredients, and let's make this delicious One Grill Bowl Chipotle Honey Chicken and Rice recipe. It's perfect for a hassle-free outdoor cooking experience!
