The Pizza-Porta or Porta Pizza converts a ceramic kamado grill (Big Green Egg, Kamado Joe etc.) into an authentic wood-fired pizza oven.

Capping off the chimney retains the heat. Our patented door and airflow vents keep the temperature steady and under control. You can adjust down to 350F for Detroit pizza, or over 700F for Neapolitan pizza.

With this accessory, you will enjoy hours of pizza cooking without fiddling with fuel or listening to a blow-torch noise. Pizzas are truly better when cooked over a steady, high-temperature, wood fire.

  • Large Pizza-Porta fits on BGE or other 18.5” Kamado Grills
  • XL Pizza-Porta fits on X-Large BGE only

Temperature balance and control are achieved by modifying the cooking chamber.

  1. The chimney is closed, trapping heat in the dome. This heat soaks into the ceramic of the dome, providing radiant energy to balance with the hot pizza stone.
  2. Heat must flow over the pizza to escape out of the side vents, creating convection cooking.
  3. Closing the oven door and using vents retains control of the airflow and therefore control of the temperature (as the kamado was designed to do).

All of these very specific details ensure that the heat is balanced top and bottom and consistent between pizzas. This balanced, controlled temperature chamber will deliver lighter, crispier crusts; whether it is one pizza or twenty.

Harness the airflow and take advantage of the capabilities of a kamado-style grill.

Installation Instructions:

  1. How to cook pizzas in the Big Green Egg?

    1. Setup Your Grill with Pizza Porta:

      • Start with a clean Big Green Egg. Install the Pizza Porta attachment by placing it over the grill opening, ensuring it is securely fastened.
    2. Preheat Your Grill:

      • Ignite the charcoal in your Big Green Egg and let it burn to create a solid bed of coals. Aim to reach a high temperature between 500°F and 600°F, ideal for pizza baking. The Pizza Porta will help in maintaining and monitoring this high heat more consistently.
    3. Insert Pizza Stone:

      • Place a pizza stone inside your Big Green Egg on the grill grate. Allow the stone to preheat along with your grill for about 10-15 minutes. The stone should be hot enough to sizzle a bit of water on contact. This is crucial for achieving a crispy pizza base.
    4. Prepare Your Pizza:

      • Assemble your pizza on a pizza peel with your chosen sauce, cheese, and toppings. The pizza should be ready to slide directly onto the hot stone.
    5. Cooking the Pizza:

      • Slide the pizza onto the preheated stone within the Big Green Egg, using the Pizza Porta’s front opening. Close the Pizza Porta’s door to seal the heat inside.
      • Cook the pizza for about 5-10 minutes. The exact time will depend on the thickness of the dough and the intensity of the heat. The Pizza Porta helps in retaining a steady high temperature and minimizing heat loss during the cooking process.
    6. Monitor and Rotate:

      • Halfway through the cooking time, check on your pizza. If necessary, rotate it 180 degrees to ensure even cooking. The front access of the Pizza Porta makes this step easy without significant heat loss.
    7. Remove and Serve:

      • Once the crust is golden and the cheese is bubbly, use the pizza peel to carefully remove the pizza from the Big Green Egg. The Pizza Porta’s design keeps the environment inside hot and stable, ensuring your pizza has that perfect pizzeria-quality crispness and well-cooked toppings.
    8. Enjoy Your Pizza:

      • Let the pizza cool for a few minutes before slicing. This allows the cheese to set slightly, making it easier to slice. Serve and enjoy your delicious, wood-fired pizza made on your Big Green Egg with the help of the Pizza Porta.

How easy is it to set up and take down the pizza oven?

The process involves simply raising the dome and inserting it onto the Big Green Egg (BGE). Once in place, the pizza oven sits on the BGE and forms a tight seal along the felt line. Therefore, the setup and takedown of the pizza oven seem to be straightforward and uncomplicated.

What is the difference between the Pizza Porta and the Dojoe?

The Pizza Porta and the Dojoe are both accessories designed for kamado grills like the Big Green Egg, but they have different designs and functionalities:

  • Pizza Porta: This accessory is a door that fits onto the front of the kamado grill with vents that control airflow and temperature. It transforms the grill into a more traditional pizza oven by retaining heat inside and allowing for temperature control through its adjustable vents. The Pizza Porta is excellent for maintaining consistent high temperatures needed for pizza cooking.

  • Dojoe: The Dojoe is also designed for kamado grills and focuses on turning the grill into a pizza oven. However, it covers the entire top of the grill, replacing the lid with a slot for sliding pizzas in and out. This setup maintains a consistent temperature but has a larger opening that can make it slightly more challenging to reach higher temperatures compared to the Pizza Porta.

How does the Pizza Porta compare to the Ooni pizza oven?

Comparing the Pizza Porta to the Ooni pizza oven involves looking at different aspects such as design, portability, and fuel source:

  • Design and Usage: The Pizza Porta is an accessory for kamado grills, enhancing a grill you already own by improving its ability to bake pizza through better heat retention and temperature control. In contrast, Ooni pizza ovens are standalone units specifically designed for making pizzas and can achieve very high temperatures (up to 950°F) very quickly.

  • Portability: Ooni ovens are typically more portable than a kamado grill with a Pizza Porta attached. Ooni's design focuses on lightweight, compact, and easy-to-move units, ideal for taking to events or storing away when not in use.

  • Fuel Source: Ooni ovens offer versatility in fuel sources, including wood, charcoal, wood pellets, or gas, depending on the model. The Pizza Porta utilizes the fuel source of the kamado grill, which is usually charcoal or wood.

Both the Pizza Porta and Ooni are excellent options for pizza enthusiasts, but your choice might depend on whether you prefer a standalone pizza oven or an accessory that enhances your existing kamado grill.
