The Pizza-Porta or Porta Pizza converts a ceramic kamado grill (Big Green Egg, Kamado Joe etc.) into an authentic wood-fired pizza oven.

Capping off the chimney retains the heat. Our patented door and airflow vents keep the temperature steady and under control. You can adjust down to 350F for Detroit pizza, or over 700F for Neapolitan pizza.

With this accessory, you will enjoy hours of pizza cooking without fiddling with fuel or listening to a blow-torch noise. Pizzas are truly better when cooked over a steady, high-temperature, wood fire.

HOW IT WORKS

 

 

Temperature balance and control are achieved by modifying the cooking chamber.

  1. The chimney is closed, trapping heat in the dome. This heat soaks into the ceramic of the dome, providing radiant energy to balance with the hot pizza stone.
  2. Heat must flow over the pizza to escape out of the side vents, creating convection cooking.
  3. Closing the oven door and using vents retains control of the airflow and therefore control of the temperature (as the kamado was designed to do).

All of these very specific details ensure that the heat is balanced top and bottom and consistent between pizzas. This balanced, controlled temperature chamber will deliver lighter, crispier crusts; whether it is one pizza or twenty.

Installation Instructions:

  1. How to cook pizzas in the Big Green Egg?

    1. Setup Your Grill with Pizza Porta:

      • Start with a clean Big Green Egg. Install the Pizza Porta attachment by placing it over the grill opening, ensuring it is securely fastened.
    2. Preheat Your Grill:

      • Ignite the charcoal in your Big Green Egg and let it burn to create a solid bed of coals. Aim to reach a high temperature between 500°F and 600°F, ideal for pizza baking. The Pizza Porta will help in maintaining and monitoring this high heat more consistently.
    3. Insert Pizza Stone:

      • Place a pizza stone inside your Big Green Egg on the grill grate. Allow the stone to preheat along with your grill for about 10-15 minutes. The stone should be hot enough to sizzle a bit of water on contact. This is crucial for achieving a crispy pizza base.
    4. Prepare Your Pizza:

      • Assemble your pizza on a pizza peel with your chosen sauce, cheese, and toppings. The pizza should be ready to slide directly onto the hot stone.
    5. Cooking the Pizza:

      • Slide the pizza onto the preheated stone within the Big Green Egg, using the Pizza Porta’s front opening. Close the Pizza Porta’s door to seal the heat inside.
